Instructions
- Prepare the Batter:
- Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
- In another bowl, mix eggs, sugars, oil, and vanilla extract until smooth.
- Gradually combine dry ingredients with the wet mixture. Fold in grated carrots and nuts (if using).
- Prepare the Air Fryer and Pan:
- Preheat the air fryer to 320°F (160°C) for 3-5 minutes.
- Grease a 6-inch cake pan or line it with parchment paper. Pour in the batter and smooth the top.
- Air Fry the Cake:
- Cook at 320°F (160°C) for 25-30 minutes. Use a toothpick to test doneness. Cool in the pan for 10 minutes before transferring to a rack.
- Prepare the Frosting:
- Beat softened cream cheese and butter until creamy. Add vanilla and powdered sugar, mixing until fluffy.
