Ingredients

For the Cream Cheese Frosting:

4 ounces (115g) cream cheese, softened

2 tablespoons unsalted butter, softened

1/2 teaspoon vanilla extract

1 cup powdered sugar


Instructions

  1. Prepare the Batter:
    • Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
    • In another bowl, mix eggs, sugars, oil, and vanilla extract until smooth.
    • Gradually combine dry ingredients with the wet mixture. Fold in grated carrots and nuts (if using).
  2. Prepare the Air Fryer and Pan:
    • Preheat the air fryer to 320°F (160°C) for 3-5 minutes.
    • Grease a 6-inch cake pan or line it with parchment paper. Pour in the batter and smooth the top.
  3. Air Fry the Cake:
    • Cook at 320°F (160°C) for 25-30 minutes. Use a toothpick to test doneness. Cool in the pan for 10 minutes before transferring to a rack.
  4. Prepare the Frosting:
    • Beat softened cream cheese and butter until creamy. Add vanilla and powdered sugar, mixing until fluffy.
