Ingredients
1 ½ cups almond flour
½ cup all-purpose flour (or gluten-free flour for a GF version)
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup granulated sugar
½ cup unsalted butter, softened (or coconut oil for dairy-free)
2 large eggs
1 teaspoon vanilla extract
½ teaspoon almond extract
½ cup plain yogurt or plant-based yogurt
¼ cup almond milk (or regular milk)
Optional: Sliced almonds for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- In a medium bowl, whisk together almond flour, all-purpose flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat butter and sugar until light and fluffy (2-3 minutes).
- Add eggs one at a time, beating well after each addition. Mix in vanilla and almond extracts.
- Gradually add the dry ingredients to the wet mixture, alternating with yogurt and almond milk. Start and end with the dry ingredients, mixing until just combined.
- Pour the batter into the prepared cake pan and smooth the top. Sprinkle sliced almonds on top, if desired.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Serve plain, dusted with powdered sugar, or topped with fresh berries.
Notes
For a gluten-free cake, use gluten-free flour.
To make it dairy-free, substitute butter with coconut oil, yogurt with plant-based yogurt, and almond milk for regular milk.
Store in an airtight container for up to 2 days at room temperature or 5 days refrigerated.
