1/3 cup finely chopped almonds

1/3 cup unsalted butter, melted

For the Cheesecake Filling:

8 ounces cream cheese, softened

1 teaspoon almond extract

1/2 cup granulated sugar

1 cup heavy whipping cream

1 cup semisweet chocolate chips, melted and cooled

For the Topping:

1/2 cup sliced almonds, toasted

Optional: chocolate shavings or a drizzle of melted chocolate

Instructions

  1. Prepare the Crust:
    • Mix graham cracker crumbs, chopped almonds, and melted butter until the mixture resembles wet sand.
    • Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate to set.
  2. Make the Filling:
    • Beat cream cheese and sugar until smooth. Blend in almond extract.
    • Whip heavy cream in a separate bowl until stiff peaks form.
    • Gently fold whipped cream into the cream cheese mixture. Fold in melted, cooled chocolate.
  3. Assemble the Cheesecake:
    • Spread the filling evenly over the crust, smoothing the top.
    • Sprinkle toasted almonds and optional toppings like chocolate shavings or melted chocolate drizzle.
  4. Chill:
    • Cover and refrigerate for at least 4-6 hours, preferably overnight, until set.
  5. Serve:
    • Remove the springform ring carefully, slice, and serve chilled.

Notes

To toast almonds, bake them at 350°F (175°C) for 5-7 minutes until golden, stirring halfway.

Customize the flavor by swapping almond extract for vanilla or hazelnut extract.

For a more intense chocolate flavor, use dark chocolate chips instead of semisweet.
