Ingredients
3 ripe bananas, mashed
3 large eggs
1/4 cup honey or maple syrup
1 tsp vanilla extract
2 1/2 cups almond flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
Optional: 1/2 cup chopped walnuts, chocolate chips, or dried fruit
Instructions
- Preheat the oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
- In a large bowl, whisk mashed bananas, eggs, honey, and vanilla until smooth.
- Stir in almond flour, baking soda, baking powder, cinnamon, and salt until just combined. Avoid overmixing.
- Fold in optional mix-ins like walnuts or chocolate chips.
- Pour batter into the prepared pan, smoothing the top.
- Bake for 45-55 minutes, checking doneness with a toothpick. Tent with foil if browning too quickly.
- Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
