Ingredients

2 cups almond flour

1 teaspoon vanilla extract

1/4 cup dark chocolate chips (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour, baking soda, and salt.
  3. Stir in melted coconut oil, maple syrup, and vanilla extract until a dough forms.
  4. Fold in dark chocolate chips if desired.
  5. Roll tablespoons of dough into balls and arrange them on the prepared baking sheet, spacing them 2 inches apart.
  6. Gently flatten each dough ball with the back of a spoon or your hand.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a nut-free option, substitute almond flour with sunflower seed flour.

Adjust sweetness by using sugar-free syrup or omitting chocolate chips.

Freeze dough balls to bake later; increase bake time by 1-2 minutes.
