2 cups almond flour

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, baking soda, and salt.
- Stir in melted coconut oil, maple syrup, and vanilla extract until a dough forms.
- Fold in dark chocolate chips if desired.
- Roll tablespoons of dough into balls and arrange them on the prepared baking sheet, spacing them 2 inches apart.
- Gently flatten each dough ball with the back of a spoon or your hand.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a nut-free option, substitute almond flour with sunflower seed flour.
