Ingredients
1 lb bacon, diced
1 medium onion, diced
6 large eggs
4 cups frozen shredded hash browns, thawed
2 cups shredded cheddar cheese
1 1/2 cups cottage cheese
1 1/4 cups shredded Swiss cheese

Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and drain on paper towels.
- In the same skillet, cook the diced onion in the bacon drippings until soft and translucent, about 5 minutes.
