Ingredients

1 cup almond flour

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 teaspoon almond extract

1/4 cup milk (or almond milk)

Optional: powdered sugar for dusting


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
  2. In a medium bowl, whisk almond flour, all-purpose flour, baking powder, and salt.
  3. Cream butter and sugar in a large bowl until fluffy, 2-3 minutes.
  4. Add eggs one at a time, then almond extract. Mix in dry ingredients alternately with milk, starting and ending with dry ingredients.
  5. Divide batter evenly into prepared muffin cups (about 2/3 full).
  6. Bake for 18-20 minutes, or until golden and a toothpick comes out clean.
  7. Cool for 5 minutes in the pan, then transfer to a wire rack. Dust with powdered sugar before serving.
