Description

Savor the hearty and flavorful Apple Carrot Beef Rib Soup, a comforting one-pot meal featuring tender beef ribs, sweet carrots, and apples, perfectly balanced with cinnamon and ginger. Ideal for cold days, this nutrient-packed dish combines savory and sweet flavors to warm you up from the inside out.

Ingredients

Soup Base:

2 tablespoons olive oil

2 pounds beef ribs (bone-in or boneless)

1 onion, chopped

3 garlic cloves, minced

2 large carrots, sliced

2 apples, peeled and chopped

1 tablespoon fresh ginger, grated

6 cups beef broth

1 teaspoon ground cinnamon

1 bay leaf

Salt and pepper to taste

Optional Garnishes:

Fresh parsley or cilantro, chopped

Crusty bread on the side

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season beef ribs with salt and pepper. Sear in the pot for 3-4 minutes per side until browned. Remove and set aside.
  2. Add onion and garlic to the pot. Sauté for 2-3 minutes until softened.
  3. Stir in carrots, apples, and grated ginger. Cook for 2 minutes, stirring occasionally.
  4. Return beef ribs to the pot. Add beef broth, cinnamon, and bay leaf. Stir to combine.
  5. Bring soup to a boil, reduce heat to low, cover, and simmer for 1½ to 2 hours, skimming fat as needed.
  6. Adjust seasoning with salt and pepper to taste. Remove bay leaf.
  7. Serve hot, garnished with parsley or cilantro. Pair with crusty bread, if desired.

Notes

Use sweeter apples like Fuji or Honeycrisp for balanced flavor.

Bone-in ribs add depth to the broth, but boneless can be substituted.

Enhance the soup with additional vegetables like parsnips or sweet potatoes.

For a spicier kick, add a pinch of cayenne or red chili flakes.
