Ingredients
Soup Base:
2 tablespoons olive oil
2 pounds beef ribs (bone-in or boneless)
1 onion, chopped
3 garlic cloves, minced
2 large carrots, sliced
2 apples, peeled and chopped
1 tablespoon fresh ginger, grated
6 cups beef broth
1 teaspoon ground cinnamon
1 bay leaf
Salt and pepper to taste
Optional Garnishes:
Fresh parsley or cilantro, chopped
Crusty bread on the side
Instructions
- Heat olive oil in a large pot over medium-high heat. Season beef ribs with salt and pepper. Sear in the pot for 3-4 minutes per side until browned. Remove and set aside.
- Add onion and garlic to the pot. Sauté for 2-3 minutes until softened.
- Stir in carrots, apples, and grated ginger. Cook for 2 minutes, stirring occasionally.
- Return beef ribs to the pot. Add beef broth, cinnamon, and bay leaf. Stir to combine.
- Bring soup to a boil, reduce heat to low, cover, and simmer for 1½ to 2 hours, skimming fat as needed.
- Adjust seasoning with salt and pepper to taste. Remove bay leaf.
- Serve hot, garnished with parsley or cilantro. Pair with crusty bread, if desired.
Notes
Use sweeter apples like Fuji or Honeycrisp for balanced flavor.
Bone-in ribs add depth to the broth, but boneless can be substituted.
Enhance the soup with additional vegetables like parsnips or sweet potatoes.
For a spicier kick, add a pinch of cayenne or red chili flakes.
