Description

Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 cup coconut sugar or brown sugar

1 large egg

1 cup plain Greek yogurt

1/4 cup milk (any kind)

1/4 cup coconut oil or vegetable oil

1 teaspoon vanilla extract

1 1/2 cups diced apples (peeled if preferred)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk the coconut sugar, egg, Greek yogurt, milk, oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold together until just combined—do not overmix.
  5. Fold in the diced apples.
  6. Divide the batter evenly among 12 muffin cups, filling each about ¾ full.
  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use firm apples like Honeycrisp, Fuji, or Granny Smith for best texture and flavor.

For a crunchier texture, add chopped walnuts or pecans.

Top with a sprinkle of cinnamon sugar for a sweeter crust.
