1 1/2 cups all-purpose flour

1/2 cup unsalted butter, melted
1/2 cup milk
1 large egg
1 teaspoon vanilla extract
1 cup peeled and diced apples (about 1 medium apple)
Topping:
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the melted butter, milk, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix). Gently fold in the diced apples.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- In a small bowl, mix the topping ingredients (brown sugar and cinnamon) and sprinkle over the muffins.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
Notes
For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
These muffins can be frozen for up to 3 months; wrap individually and store in a freezer-safe bag.
You can use any variety of apples; Granny Smith or Honeycrisp are recommended for a balance of sweetness and tartness.
