Ingredients

1 1/2 cups all-purpose flour

1/2 cup granulated sugar

1/4 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsalted butter, melted

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1 cup peeled and diced apples (about 1 medium apple)

Topping:

1/4 cup brown sugar

1/2 teaspoon ground cinnamon


Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together the melted butter, milk, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix). Gently fold in the diced apples.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. In a small bowl, mix the topping ingredients (brown sugar and cinnamon) and sprinkle over the muffins.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For a healthier option, substitute half of the all-purpose flour with whole wheat flour.

These muffins can be frozen for up to 3 months; wrap individually and store in a freezer-safe bag.

You can use any variety of apples; Granny Smith or Honeycrisp are recommended for a balance of sweetness and tartness.
