Description
A crisp and refreshing apple salad combining sweet apples, crunchy nuts, and a tangy Greek yogurt dressing—perfect as a light side or healthy snack.
Ingredients
3 large apples, cored and thinly sliced
1/2 cup celery, chopped
1/4 cup red onion, finely diced
1/3 cup walnuts, toasted and chopped
1/4 cup dried cranberries
1/2 cup plain Greek yogurt
1 tablespoon honey
1 tablespoon lemon juice
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
- In a large bowl, combine the sliced apples, celery, red onion, walnuts, and dried cranberries.
- In a small bowl, whisk together Greek yogurt, honey, lemon juice, salt, and pepper until smooth.
- Pour the dressing over the apple mixture and toss gently to coat evenly.
- Garnish with fresh parsley if desired.
- Chill in the refrigerator for at least 15 minutes before serving to let the flavors meld.
Notes
Use sweet-tart apples like Fuji or Honeycrisp for best flavor; Granny Smith apples add a tangy crunch.
Store leftovers in an airtight container in the fridge for up to 2 days; serve chilled.
To avoid browning, toss apples immediately with lemon juice and dressing if making ahead.
Swap walnuts with pecans, almonds, or cashews for variation.
For a vegan version, use plant-based yogurt and replace honey with maple syrup or agave nectar.
Adding shredded carrot or chopped celery leaves can enhance freshness and color.
