Description

Soft and chewy Apple Snickerdoodle Bars made with cinnamon, apples, and wholesome ingredients. These bars are naturally sweetened, vegan, and perfect for a cozy dessert or snack.


Ingredients

1 1/2 cups spelt flour or all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon

1/2 cup coconut sugar or brown sugar

1/4 cup pure maple syrup

1/3 cup unsweetened applesauce

1/4 cup nut butter (such as almond or cashew)

1 teaspoon pure vanilla extract

1 cup finely chopped apples (peeled or unpeeled)

Optional topping: 1 tablespoon coconut sugar + 1/2 teaspoon cinnamon for sprinkling


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In another bowl, stir together the coconut sugar, maple syrup, applesauce, nut butter, and vanilla until smooth.
  4. Combine the wet and dry ingredients, mixing just until everything is evenly incorporated.
  5. Gently fold in the chopped apples.
  6. Spread the batter into the prepared pan and sprinkle the optional cinnamon-sugar topping if using.
  7. Bake for 22–25 minutes, until a toothpick inserted in the center comes out mostly clean.
  8. Let the bars cool, then slice and enjoy warm or at room temperature.

Notes

To make gluten-free, use a gluten-free all-purpose flour blend.

For a nut-free version, substitute sunflower seed butter for nut butter.

Use up to 1 1/2 cups of apples for extra texture.

Add a drizzle of vegan caramel sauce for a richer flavor.

Include a pinch of nutmeg or cloves for a spicier version.

Store in an airtight container at room temperature for 3 days, refrigerate for 1 week, or freeze for up to 2 months.
