Description
Soft and chewy Apple Snickerdoodle Bars made with cinnamon, apples, and wholesome ingredients. These bars are naturally sweetened, vegan, and perfect for a cozy dessert or snack.
Ingredients
1 1/2 cups spelt flour or all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 cup coconut sugar or brown sugar
1/4 cup pure maple syrup
1/3 cup unsweetened applesauce
1/4 cup nut butter (such as almond or cashew)
1 teaspoon pure vanilla extract
1 cup finely chopped apples (peeled or unpeeled)
Optional topping: 1 tablespoon coconut sugar + 1/2 teaspoon cinnamon for sprinkling
Instructions
- Preheat the oven to 350°F (175°C) and line an 8-inch baking pan with parchment paper or lightly grease it.
 - In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
 - In another bowl, stir together the coconut sugar, maple syrup, applesauce, nut butter, and vanilla until smooth.
 - Combine the wet and dry ingredients, mixing just until everything is evenly incorporated.
 - Gently fold in the chopped apples.
 - Spread the batter into the prepared pan and sprinkle the optional cinnamon-sugar topping if using.
 - Bake for 22–25 minutes, until a toothpick inserted in the center comes out mostly clean.
 - Let the bars cool, then slice and enjoy warm or at room temperature.
 
Notes
To make gluten-free, use a gluten-free all-purpose flour blend.
For a nut-free version, substitute sunflower seed butter for nut butter.
Use up to 1 1/2 cups of apples for extra texture.
Add a drizzle of vegan caramel sauce for a richer flavor.
Include a pinch of nutmeg or cloves for a spicier version.
Store in an airtight container at room temperature for 3 days, refrigerate for 1 week, or freeze for up to 2 months.
