Description

These Apricot Coconut Pecan Bars are a delightful combination of dried apricots, toasted coconut, and crunchy pecans, all held together by a touch of honey or maple syrup. Ingredients

1 cup dried apricots, chopped

1 cup shredded coconut, unsweetened

1/2 cup pecans, chopped

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper to make removal easier.
  2. In a medium-sized bowl, combine the chopped apricots, shredded coconut, and chopped pecans.
  3. In a small saucepan, melt the coconut oil over low heat. Once melted, remove from the heat and stir in the honey or maple syrup, vanilla extract, and salt.
  4. Pour the wet mixture over the dry ingredients and stir well to ensure everything is evenly coated.
  5. Transfer the mixture into the prepared baking pan, pressing it down firmly to create an even layer.

Notes

For a different fruity twist, you can use dried figs or dates instead of apricots.
