Ingredients

1/2 avocado, sliced

4 slices mozzarella cheese

4 cherry tomatoes, sliced in half

2 slices multigrain bread (such as Ezekiel sprouted grain bread)

Butter, for spreading


Instructions

  1. Butter the outside layers of both slices of bread.
  2. Heat a frying pan over medium heat. Place one slice of bread, buttered side down, in the pan.
  3. Layer the mozzarella cheese, sliced tomatoes, and avocado on top of the bread in the pan.
  4. Place the other slice of bread on top, buttered side up.
  5. Cook for a few minutes until the bottom slice is golden brown. Carefully flip the sandwich and cook until the other side is also golden brown and the cheese is melted and gooey.
  6. Remove from the pan, slice in half if desired, and serve immediately.
