Ingredients
1/2 avocado, sliced
4 slices mozzarella cheese
4 cherry tomatoes, sliced in half
2 slices multigrain bread (such as Ezekiel sprouted grain bread)
Butter, for spreading
Instructions
- Butter the outside layers of both slices of bread.
- Heat a frying pan over medium heat. Place one slice of bread, buttered side down, in the pan.
- Layer the mozzarella cheese, sliced tomatoes, and avocado on top of the bread in the pan.
- Place the other slice of bread on top, buttered side up.
- Cook for a few minutes until the bottom slice is golden brown. Carefully flip the sandwich and cook until the other side is also golden brown and the cheese is melted and gooey.
- Remove from the pan, slice in half if desired, and serve immediately.
