Description

Tender baked cod fillets are coated in a rich lemon-garlic butter sauce that keeps the fish moist and flavorful. This quick oven-baked dish delivers bright citrus flavor and delicate, flaky texture with minimal preparation.


Ingredients

4 cod fillets, freshly thawed and patted dry

Salt to taste

Pepper to taste

1/2 cup unsalted butter or European-style cultured butter, melted

2 tablespoons extra virgin olive oil

2 tablespoons freshly squeezed lemon juice

2 cloves garlic, grated


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the cod fillets dry with paper towels to remove excess moisture.
  3. Season both sides of the cod fillets with salt and pepper.
  4. In a small bowl, whisk together the melted butter, grated garlic, lemon juice, and olive oil until well combined.
  5. Arrange the seasoned cod fillets in a baking dish in a single layer.
  6. Pour half of the prepared butter sauce over the fillets, coating them evenly.
  7. Bake for 12–15 minutes, or until the fish flakes easily with a fork.
  8. Halfway through baking, baste the fish with the remaining butter sauce.
  9. Remove from the oven and let the cod rest for a few minutes before serving.

Notes

Add chopped fresh parsley or dill to the butter sauce for extra herbal flavor.

A pinch of red pepper flakes can add gentle heat.

Lemon slices can be added to the baking dish for extra citrus aroma.

Haddock or halibut can be used instead of cod for a firmer texture.

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheat in a covered baking dish at 300°F (150°C) for 8–10 minutes for best texture.
