Ingredients

4 boneless, skinless chicken breasts, cut into 1″ pieces

1 cup cornstarch

2 large eggs

1/4 cup vegetable oil

1/2 cup granulated sugar

1/4 cup ketchup

1/2 cup apple cider vinegar

2 tbsp. soy sauce

1 tsp. garlic powder

1/2 tsp. sea salt


Instructions

  1. Preheat oven to 325F. Line a 13 x 9-inch pan with parchment paper.
  2. Season chicken with salt and pepper. Place in a ziploc bag with cornstarch and shake to coat.
  3. Beat eggs in a shallow bowl. Heat oil in a skillet until sizzling.
  4. Dip chicken in eggs, then sear in skillet until golden. Place in prepared pan.
  5. Combine sugar, ketchup, vinegar, soy sauce, garlic powder, and sea salt. Pour over chicken.
  6. Bake for 1 hour, tossing halfway.

Notes
