Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tablespoons olive oil
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
1 cup sun-dried tomatoes, chopped
1 cup fresh spinach, chopped
3 cloves garlic, minced
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper. Heat the olive oil in a skillet over medium-high heat. Sear the chicken breasts until golden brown on both sides, about 2-3 minutes per side. Transfer the seared chicken to a baking dish.
- In the same skillet, combine the heavy cream, chicken broth, grated Parmesan cheese, Italian seasoning, sun-dried tomatoes, chopped spinach, and minced garlic. Cook until the spinach is wilted and the sauce is slightly thickened.
- Pour the creamy sauce over the chicken breasts in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Allow the chicken to rest for a few minutes before serving.
