1 cup Kodiak Chocolate Chip Power Cakes Flapjack & Waffle Mix

2/3 cup mashed banana (about 2 medium bananas)

1/4 cup peanut butter

1 egg

1/4 cup walnuts, chopped

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a mini muffin tin or line with mini muffin liners.
  2. In a large mixing bowl, combine the mashed banana and peanut butter until smooth.
  3. Add the egg and mix well until fully incorporated.
  4. Stir in the Kodiak Chocolate Chip Power Cakes Flapjack & Waffle Mix until combined.
  5. Gently fold in the chopped walnuts.
  6. Spoon the batter into the prepared mini muffin tin, filling each cavity about 3/4 full.
  7. Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  9. Serve warm or at room temperature.

Notes

Substitute peanut butter with almond butter, cashew butter, or sunflower seed butter for a different flavor.

Add mix-ins like dried fruit, different nuts, or shredded coconut for variety.

For a gluten-free version, use a gluten-free flapjack and waffle mix.

To make these bites vegan, use a flax egg and a vegan-friendly pancake mix.
