Ingredients
1 lb ground beef
1 small onion, diced
2 cups cooked rice
1 can (10 oz) enchilada sauce
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn, thawed
2 cups shredded Mexican blend cheese, divided
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper, to taste
Fresh cilantro, chopped (for garnish)
Optional toppings: sour cream, sliced green onions, diced tomatoes
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Cook the Beef: In a skillet over medium heat, brown the ground beef with diced onion until the beef is fully cooked and the onion is softened. Drain any excess grease.
- Season and Add Beans and Corn: Stir in chili powder, cumin, salt, and pepper. Add black beans and corn, cooking for 2-3 minutes until heated through.
- Assemble the Casserole: Layer cooked rice at the bottom of the prepared dish. Pour half of the enchilada sauce over the rice, then add the beef mixture. Sprinkle 1 cup of shredded cheese over the beef, then pour the remaining enchilada sauce over it. Add the remaining cheese on top.
- Bake: Cover the casserole with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Serve: Garnish with chopped cilantro and optional toppings like sour cream, green onions, or diced tomatoes. Serve warm.
