Description
A creamy and comforting classic Beef Stroganoff made with tender strips of seared beef, sautéed mushrooms, and a rich sour cream sauce served over warm egg noodles. Perfect for a hearty weeknight dinner or an elegant meal for guests.
Ingredients
1 1/2 lbs beef sirloin or tenderloin, thinly sliced into strips
2 tablespoons olive oil
1 tablespoon butter
1 medium onion, finely chopped
2 cloves garlic, minced
10 oz mushrooms, sliced
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 cup beef broth
1 cup sour cream
1 tablespoon all-purpose flour
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
12 oz egg noodles, cooked according to package instructions
Instructions
- Season the sliced beef generously with salt and black pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear the beef in batches for 1–2 minutes per side until browned but still tender. Remove and set aside.
- Add the remaining olive oil and butter to the same skillet. Sauté the chopped onion for 3–4 minutes until softened.
- Add minced garlic and sliced mushrooms. Cook for 5–7 minutes until mushrooms release moisture and turn golden.
- Stir in the flour and cook for 1 minute to remove the raw taste.
- Add Dijon mustard and Worcestershire sauce, stirring to combine.
- Slowly pour in the beef broth while stirring and scraping up browned bits. Simmer for 4–5 minutes until slightly thickened.
- Reduce heat to low and stir in the sour cream until smooth and creamy. Do not boil.
- Return the beef and its juices to the skillet and simmer gently for 2–3 minutes until heated through.
- Serve over cooked egg noodles and garnish with fresh parsley.
Notes
Slice the beef thinly against the grain for maximum tenderness.
Avoid boiling after adding sour cream to prevent curdling.
Substitute Greek yogurt for a lighter alternative to sour cream.
For extra depth of flavor, add a splash of white wine before the beef broth and let it reduce.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
