Ingredients

1/2 cup unsalted butter

3/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon lemon zest

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh blueberries

1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, vanilla extract, and lemon zest until fully incorporated.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  5. In a small bowl, toss the fresh blueberries with cornstarch to coat them lightly. Gently fold the blueberries into the cookie dough.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are set and the tops are slightly golden.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For best results, use fresh blueberries.
