4 medium sweet potatoes

1 can (15 oz) black beans, drained and rinsed
1 cup shredded cheddar cheese (optional)

Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Bake Sweet Potatoes: Pierce each sweet potato several times with a fork. Place them on a baking sheet lined with foil or parchment paper. Bake for 45-60 minutes, or until tender.
- Prepare the Filling: While the sweet potatoes are baking, heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 5 minutes. Add minced garlic and diced red bell pepper, cooking for another 3-4 minutes until tender.
- Season and Add Black Beans: Stir in ground cumin, chili powder, paprika, salt, and pepper to the skillet, cooking for 1 minute until fragrant. Add drained and rinsed black beans to the skillet, stirring to combine. Cook for an additional 2-3 minutes until heated through.
- Assemble Stuffed Sweet Potatoes: Once the sweet potatoes are baked and cool enough to handle, slice each one open lengthwise. Fluff the insides with a fork and spoon the black bean mixture into each sweet potato.
- Add Cheese (Optional) and Bake: If desired, sprinkle shredded cheddar cheese over the stuffed sweet potatoes. Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
