Ingredients

1 large sweet potato, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1/4 teaspoon garlic powder

Salt and pepper to taste

8 small corn tortillas

1 avocado, sliced

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped

1 lime, cut into wedges

Salsa or hot sauce (optional)

Crumbled feta or cotija cheese (optional)


Instructions

  1. Preheat oven to 425°F (220°C). Toss diced sweet potatoes with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Spread evenly on a baking sheet.
  2. Roast sweet potatoes for 20-25 minutes, stirring halfway through, until tender and caramelized.
  3. While roasting, heat black beans in a small saucepan over medium heat until warm. Season with salt and pepper.
  4. Warm corn tortillas in a dry skillet over medium heat for about 30 seconds per side until flexible.
