Description

Flavor-packed tacos made on the Blackstone griddle—crispy, sizzling, and filled with your choice of protein, fresh toppings, and creamy sauces for the ultimate street taco experience.

Ingredients

1 lb ground beef (or chicken, steak, or plant-based protein)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning

1/4 teaspoon salt

1/4 teaspoon black pepper

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup sour cream or Greek yogurt

1/4 cup salsa or taco sauce

Optional: sliced jalapeños, avocado, lime wedges, cilantro

Instructions

  1. Preheat the Blackstone griddle to medium-high heat.
  2. Drizzle olive oil across the griddle surface and spread it with a spatula.
  3. Add chopped onions and garlic, cooking for 2–3 minutes until softened.
  4. Add ground beef and break it apart as it browns.
  5. Stir in taco seasoning, salt, and pepper. Cook for 6–8 minutes until fully browned and flavorful.
  6. Warm tortillas on a clean section of the griddle for about 30 seconds per side until soft and lightly charred.
  7. Assemble tacos by layering tortillas with meat, lettuce, tomatoes, cheese, and desired toppings.
  8. Serve immediately with lime wedges and extra sauce on the side.

Notes

Swap ground beef for grilled chicken, shrimp, or a plant-based option.

Use lettuce wraps for a low-carb version.

Add pickled red onions or chipotle mayo for extra flavor.

Store meat and toppings separately in airtight containers in the fridge for up to 3 days.

Reheat meat on the griddle or in a skillet over medium heat.

Warm tortillas before assembling to prevent tearing.
