Ingredients
1 lb ground beef (or chicken, steak, or plant-based protein)
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon taco seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
8 small corn or flour tortillas
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup shredded cheese (cheddar or Mexican blend)
1/4 cup sour cream or Greek yogurt
1/4 cup salsa or taco sauce
Optional: sliced jalapeños, avocado, lime wedges, cilantro
Instructions
- Preheat the Blackstone griddle to medium-high heat.
- Drizzle olive oil across the griddle surface and spread it with a spatula.
- Add chopped onions and garlic, cooking for 2–3 minutes until softened.
- Add ground beef and break it apart as it browns.
- Stir in taco seasoning, salt, and pepper. Cook for 6–8 minutes until fully browned and flavorful.
- Warm tortillas on a clean section of the griddle for about 30 seconds per side until soft and lightly charred.
- Assemble tacos by layering tortillas with meat, lettuce, tomatoes, cheese, and desired toppings.
- Serve immediately with lime wedges and extra sauce on the side.
