Ingredients
1/2 cup rolled oats
1 cup almond flour
2 scoops vanilla protein powder
1/4 cup cream cheese (softened)
1/4 cup Greek yogurt
2 tbsp honey or maple syrup
1/2 cup fresh or frozen blueberries
1 tsp vanilla extract
1/4 tsp salt
Instructions
- In a large mixing bowl, combine the rolled oats, almond flour, and protein powder. Mix well to ensure the dry ingredients are evenly distributed.
- In a separate bowl, blend the softened cream cheese, Greek yogurt, honey (or maple syrup), vanilla extract, and salt until smooth and creamy.
- Gently fold the blueberries into the cream cheese mixture, taking care not to crush them.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough-like consistency forms.
- Scoop out portions of the mixture with a tablespoon and roll them into small balls with your hands.
- Place the protein bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Store the bites in an airtight container in the fridge for up to a week or freeze them for longer storage.
Notes
These bites are ideal for a quick snack, post-workout, or a dessert alternative.
You can substitute almond flour with oat or coconut flour, but adjustments may be necessary for consistency.
If fresh blueberries aren’t available, frozen blueberries work as well—just be careful not to overmix them.
To keep the bites fresh, store them in an airtight container in the fridge. They can be frozen for up to 3 months.
