Ingredients

For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Cream Cheese Filling:

16 oz (2 packages) cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/4 cup sour cream

For the Blueberry Topping:

2 cups fresh or frozen blueberries

1/4 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Crust:
    • Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
    • Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture into the bottom of the pan.
    • Bake for 8-10 minutes until lightly golden. Let cool.
  2. Make the Cream Cheese Filling:
    • Beat softened cream cheese until smooth. Add sugar and mix until combined.
    • Add eggs one at a time, beating well after each. Stir in vanilla extract and sour cream. Pour over cooled crust.
  3. Prepare the Blueberry Topping:
    • Combine blueberries, sugar, cornstarch, lemon juice, and vanilla extract in a saucepan. Cook over medium heat, stirring, until thickened. Let cool slightly, then spoon over the cream cheese layer.
  4. Bake the Bars:
    • Bake for 25-30 minutes until edges are set and center is slightly jiggly. Cool completely in the pan. Refrigerate for at least 2 hours before cutting.
  5. Serve:
    • Lift bars out using parchment paper. Cut into squares and serve chilled.

Notes

Ensure the bars are fully chilled for the best texture before cutting.

If using frozen blueberries, thaw and drain them before use to avoid excess moisture.
