These Breakfast Rolls are soft and fluffy, filled with a savory blend of scrambled eggs, crispy bacon, and melted cheddar cheese. Perfect for a hearty start to your day or a special weekend brunch, these homemade rolls offer a delightful combination of flavors and textures that will make your mornings memorable.

Ingredients

For the Dough:

2 1/4 teaspoons (1 packet) active dry yeast

1/4 cup warm water (110°F/45°C)

1 tablespoon granulated sugar

3 1/4 cups all-purpose flour

1/2 teaspoon salt

1/2 cup milk, warmed

1/4 cup unsalted butter, melted

1 large egg

For the Filling:

6 large eggs, scrambled

8 slices bacon, cooked and crumbled

1 1/2 cups shredded cheddar cheese

Salt and pepper, to taste

For the Topping:

2 tablespoons melted butter

1/4 teaspoon garlic powder (optional)

Fresh parsley, chopped (for garnish)

Instructions

  1. Activate the Yeast: In a small bowl, mix the warm water, yeast, and sugar. Let sit for about 5 minutes until frothy.
  2. Prepare the Dough: Combine flour and salt in a large bowl. Add warm milk, melted butter, egg, and yeast mixture. Stir until dough forms. Knead on a floured surface for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour.
  3. Prepare the Filling: Scramble the eggs and cook the bacon. Mix with shredded cheddar cheese. Season with salt and pepper.
  4. Assemble the Rolls: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish. Punch down the dough and roll out into a large rectangle. Spread the filling over the dough. Roll up tightly and slice into 12 pieces. Place in the baking dish.
  5. Bake the Rolls: Brush with melted butter mixed with garlic powder. Bake for 20-25 minutes until golden brown. Garnish with fresh parsley before serving.

Notes

For a different cheese flavor, substitute cheddar with Swiss or Monterey Jack.

You can prepare and refrigerate or freeze the rolls ahead of time. Let them rise before baking if refrigerated, or thaw if frozen.
