Ingredients
1.5 lbs boneless skinless chicken breasts
Salt, pepper, garlic powder, paprika, Italian seasoning
1 Tbsp olive oil
1 cup chopped broccoli florets
1 cup shredded cheddar cheese
¼ cup cream cheese
Instructions
-
Preheat the oven to 375°F (190°C).
-
Slice the chicken breasts horizontally to create a pocket, being careful not to cut all the way through.
-
Season the chicken with salt, pepper, paprika, and half of the garlic powder.
-
In a mixing bowl, combine the chopped broccoli, shredded cheddar cheese, cream cheese, and the remaining garlic powder. Season with salt and pepper to taste and mix until well combined.
-
Stuff each chicken breast with the broccoli and cheese mixture, securing the openings with toothpicks.
-
Heat olive oil in a large ovenproof skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
-
Transfer the skillet to the oven and bake for 15-17 minutes, until the chicken reaches an internal temperature of 165°F.
-
Remove from the oven, discard toothpicks, and serve.
Notes
Make sure to secure the chicken with toothpicks to prevent the stuffing from leaking out.
Leftovers can be stored in an airtight container for up to 3 days. Reheat in the oven at 350°F for 10-15 minutes for best results.
You can substitute frozen broccoli for fresh, but be aware that it may release excess moisture during cooking.
