Description

Decadent Buckeye Brownies feature a fudgy brownie base, a creamy peanut butter center, and a smooth chocolate ganache topping. Inspired by classic Buckeye candy, these layered brownies are rich, indulgent, and perfect for any occasion.

Ingredients

1 box (18.3 oz) fudge brownie mix (plus ingredients listed on the box: typically eggs, oil, and water)

1 1/2 cups creamy peanut butter

1/2 cup unsalted butter, melted

2 cups powdered sugar

1 teaspoon vanilla extract

1 1/2 cups semi-sweet chocolate chips

1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper or grease it lightly.
  2. Prepare the brownie batter according to the package directions, pour into the dish, and bake for 20–25 minutes or as directed. Let brownies cool completely.
  3. In a bowl, mix melted butter, creamy peanut butter, powdered sugar, and vanilla extract until smooth.
  4. Spread the peanut butter layer evenly over the cooled brownie base and refrigerate while making the ganache.
  5. Microwave chocolate chips and heavy cream in 20-second intervals, stirring each time, until melted and smooth.
  6. Pour ganache over the peanut butter layer and spread evenly.
  7. Refrigerate the brownies for 1–2 hours, or until the ganache is fully set.
  8. Cut into squares and serve.

Notes

Add chopped peanuts to the ganache for extra crunch.

Use milk chocolate chips for a sweeter flavor.

Swap in a homemade brownie recipe if preferred.

Use gluten-free brownie mix for a gluten-free version.

Swirl extra peanut butter into ganache for a marbled effect.

Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
