Ingredients

1 tablespoon olive oil

1 lb boneless, skinless chicken breasts, cubed

Salt and pepper, to taste

3 cloves garlic, minced

3 cups chicken broth

1 cup buffalo sauce

1 cup heavy cream

12 oz penne or rotini pasta, uncooked

1 ½ cups shredded cheddar cheese

¼ cup blue cheese crumbles (optional)

2 green onions, chopped, for garnish (optional)


Instructions

  1. Cook the Chicken: Heat olive oil over medium heat in a large pot. Season the cubed chicken with salt and pepper, then cook until browned and cooked through, about 5-6 minutes. Add the minced garlic and cook for an additional minute.
  2. Add the Liquids and Pasta: Pour in chicken broth, buffalo sauce, and heavy cream. Stir to combine. Add the uncooked pasta, bring to a boil, then reduce to a simmer.
  3. Cook the Pasta: Cover the pot and cook for 12-15 minutes, stirring occasionally, until pasta is tender and the sauce has thickened.

Notes
