Ingredients

2 cups all-purpose flour, packed (substitute with self-rising flour and omit baking powder and salt)

1 Tbsp baking powder (omit if using self-rising flour)

½ tsp salt (omit if using self-rising flour)

½ cup butter, salted, cut into small pieces (add ¼ tsp more salt if using unsalted butter)

1 cup milk (regular or buttermilk)


Instructions

  1. Preheat oven to 400 F.
  2. In a large mixing bowl, combine flour, baking powder, and salt. Add butter in small pieces.
  3. With your hands or a pastry blender, mix until butter is pea-sized and mixture is crumbly.
  4. Pour in milk and stir until just combined, avoiding overmixing.
  5. Roll out dough on a floured surface to ¾ inch thick and cut with a biscuit cutter.
  6. Place biscuits on an ungreased cookie sheet, touching for higher rise.
  7. Bake for 10 minutes or until golden brown.

Notes

For best results, use cold butter and do not overwork the dough.
