Ingredients

1 large butternut squash, peeled, seeded, and cubed

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

1/4 teaspoon cayenne pepper (optional)

1/2 cup unsalted butter

1/4 cup all-purpose flour

2 cups milk

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/4 cup chopped fresh parsley

1 cup panko breadcrumbs

1/4 cup grated Parmesan cheese (for topping)

2 tablespoons melted butter (for topping)


Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roast the Squash: Toss butternut squash cubes with olive oil, salt, black pepper, nutmeg, cinnamon, and cayenne pepper. Spread on the baking sheet and roast for 25-30 minutes, until tender and slightly caramelized. Set aside.
  3. Make the Sauce: Melt butter in a saucepan over medium heat. Add flour and whisk to create a roux. Gradually add milk, whisking until thickened. Stir in Parmesan and mozzarella until melted. Remove from heat and mix in roasted squash and parsley.
  4. Assemble the Casserole: Reduce oven temperature to 375°F (190°C). Transfer the squash mixture to a greased 9×13-inch dish. Mix panko breadcrumbs, Parmesan, and melted butter, then sprinkle over the casserole.
  5. Bake: Bake for 20-25 minutes, until the top is golden brown and crispy. Let cool for a few minutes before serving.
