Ingredients
For the Cheesecake:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
3 tablespoons Imperial Sugar Extra Fine Granulated Sugar
4 packages (8 ounces each) cream cheese, softened
1 cup Imperial Sugar Extra Fine Granulated Sugar
4 large eggs
2 teaspoons vanilla extract
1 cup butterscotch chips, melted
For the Butterscotch Sauce:
1 cup Imperial Sugar Light Brown Sugar
1/2 cup heavy cream
4 tablespoons unsalted butter
1 teaspoon vanilla extract
Pinch of salt
Instructions
- Preheat oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, melted butter, and 3 tablespoons of sugar. Press into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then let it cool completely.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth.
- Add eggs one at a time, mixing after each addition. Stir in vanilla.
- Fold in melted butterscotch chips and mix until combined.
- Pour the cheesecake filling over the cooled crust, smooth the top.
- Bake for 55-60 minutes until set in the center. Let cool, then refrigerate for at least 4 hours or overnight.
- For the butterscotch sauce, combine brown sugar, heavy cream, and butter in a saucepan over medium heat, stirring until smooth.
- Remove from heat, stir in vanilla and salt. Let cool to room temperature.
- Serve the chilled cheesecake with butterscotch sauce drizzled generously on top.
