Description

Ingredients

For the Cheesecake:

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

3 tablespoons Imperial Sugar Extra Fine Granulated Sugar

4 packages (8 ounces each) cream cheese, softened

1 cup Imperial Sugar Extra Fine Granulated Sugar

4 large eggs

2 teaspoons vanilla extract

1 cup butterscotch chips, melted

For the Butterscotch Sauce:

1 cup Imperial Sugar Light Brown Sugar

1/2 cup heavy cream

4 tablespoons unsalted butter

1 teaspoon vanilla extract

Pinch of salt


Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and 3 tablespoons of sugar. Press into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes, then let it cool completely.
  4. In a large bowl, beat cream cheese and 1 cup sugar until smooth.
  5. Add eggs one at a time, mixing after each addition. Stir in vanilla.
  6. Fold in melted butterscotch chips and mix until combined.
  7. Pour the cheesecake filling over the cooled crust, smooth the top.
  8. Bake for 55-60 minutes until set in the center. Let cool, then refrigerate for at least 4 hours or overnight.
  9. For the butterscotch sauce, combine brown sugar, heavy cream, and butter in a saucepan over medium heat, stirring until smooth.
  10. Remove from heat, stir in vanilla and salt. Let cool to room temperature.
  11. Serve the chilled cheesecake with butterscotch sauce drizzled generously on top.

Notes

For a twist, try adding a pinch of cinnamon or nutmeg to the filling.

Sprinkle crushed toffee or pecans on top for extra texture.
