Ingredients

1 lb boneless, skinless chicken breasts, sliced into strips

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small onion, sliced

3 cloves garlic, minced

1 1/2 cups heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

8 oz penne or fettuccine pasta

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Season the Chicken: Toss the sliced chicken with Cajun seasoning until evenly coated.
  3. Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  4. Sauté the Vegetables: In the same skillet, add sliced bell peppers, onion, and garlic. Sauté for 3-4 minutes until tender.
  5. Make the Sauce: Reduce heat to medium, pour in heavy cream and chicken broth. Simmer for 2-3 minutes until sauce thickens. Stir in Parmesan until melted and smooth.
  6. Combine Everything: Return the cooked chicken to the skillet, add the drained pasta, and toss to coat with the sauce. Season with salt and pepper to taste.
  7. Serve: Garnish with chopped fresh parsley and serve hot.
