This Cajun Chicken recipe features tender chicken breasts seared to perfection and simmered in a rich, creamy sauce with a flavorful Cajun kick. Perfectly paired with rice, beans, or a fresh salad, this dish is a spicy and satisfying meal that’s easy to prepare and sure to impress.
Ingredients
Sauce:
1 ½ cups chicken broth
¾ cups heavy cream (or half and half)
1 tablespoon honey
2 teaspoons hot sauce
2 teaspoons Cajun seasoning
1 teaspoon brown sugar
½ teaspoon mustard powder
½ teaspoon oregano
Pinch of cayenne pepper
Pinch of red pepper flakes
Chicken:
2 large boneless skinless chicken breasts
1 ½ teaspoons Cajun seasoning
3 tablespoons flour
1–2 tablespoons olive oil
Sauce Base:
3 tablespoons butter
3 cloves garlic, minced
3 tablespoons flour
10 oz. Rotel diced tomatoes with green chilies, juice reserved
¾ cup cheddar jack cheese, shredded
2 teaspoons lime juice
For Serving:
Lime wedges
Fresh cilantro, roughly chopped
Instructions
- Preheat oven to 350°F (175°C). Drain and reserve juice from diced tomatoes.
- Combine sauce ingredients in a large measuring cup and set aside.
- Slice chicken breasts lengthwise, pound to ½ inch thick, and season with Cajun seasoning and flour.
- Heat oil in a skillet over medium-high heat and sear chicken until golden, about 4-5 minutes per side. Set aside.
- In the same skillet, add reserved tomato juice, scrape the bottom, then add butter and garlic. Cook for 1 minute.
- Stir in flour for 2 minutes, gradually add sauce mixture, bring to a boil, then simmer.
- Add drained tomatoes and simmer for 5-7 minutes. Lower heat and stir in cheese and lime juice.
- Return chicken to skillet, spoon sauce over top, and simmer for 5 minutes. Garnish with lime wedges and cilantro.
Notes
Substitute chicken thighs for chicken breasts for a different texture.
Adjust spice level by adding more hot sauce or cayenne pepper if desired.
If using a dairy-free alternative, you may need to adjust the thickness of the sauce.
