1/4 cup unsalted butter
1/2 cup brown sugar, packed
1/4 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/4 cup chopped pecans (optional)
Instructions
-
Preheat the oven to 375°F (190°C).

In a large pot, boil the sweet potato cubes for 10-12 minutes until just tender. Drain and set aside.

In a medium saucepan, melt the butter over medium heat. Add brown sugar, maple syrup, vanilla, cinnamon, nutmeg, and salt. Stir and cook for 3-5 minutes until smooth and slightly thickened.
-
Add cooked sweet potatoes to the saucepan and toss to coat in the syrup mixture.
-
Transfer the sweet potatoes to a greased 9×13-inch baking dish and pour any remaining syrup over the top.
-
Sprinkle with chopped pecans, if desired.
-
Bake for 25-30 minutes, stirring halfway through, until sweet potatoes are tender and syrup thickens into a glaze.
-
Let cool slightly before serving.
Notes
For a different texture, you can swap pecans with other nuts like walnuts or almonds.
For a more indulgent treat, add mini marshmallows for the last 10 minutes of baking.
Honey can replace maple syrup for a different sweetness.
