Description

Indulge in the rich, creamy flavors of Cannoli Cheesecake Bars—a delightful fusion of classic Italian cannoli and creamy cheesecake. With a buttery graham cracker crust, luscious ricotta-cream cheese filling, and bursts of mini chocolate chips, these bars are perfect for entertaining or as a make-ahead dessert.

Ingredients

For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 teaspoon cinnamon

1/2 cup unsalted butter, melted
For the Filling:

1 cup ricotta cheese

1 cup cream cheese, softened

1/2 cup granulated sugar

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon orange zest (optional)

2 large eggs

1/2 cup mini chocolate chips
For Garnish:

Powdered sugar for dusting

Additional mini chocolate chips (optional)

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. Prepare the Crust:
Combine graham cracker crumbs, granulated sugar, cinnamon, and melted butter in a bowl. Mix until the texture resembles wet sand. Press into the prepared pan and bake for 8-10 minutes. Cool completely.
  3. Make the Filling:
Beat ricotta, cream cheese, granulated sugar, powdered sugar, vanilla extract, and optional orange zest until smooth. Add eggs one at a time, mixing gently.
  4. Add Chocolate Chips:
Fold in mini chocolate chips evenly throughout the mixture.
  5. Assemble and Bake:
Pour the filling over the cooled crust. Smooth the top and bake for 30-35 minutes, until the edges are set and the center is slightly jiggly.
  6. Chill and Serve:
Cool to room temperature, then refrigerate for at least 4 hours or overnight. Slice into bars and garnish with powdered sugar and additional chocolate chips if desired.

Notes

For a gluten-free option, substitute regular graham crackers with gluten-free versions.

Optional toppings include crushed pistachios or a drizzle of melted chocolate for added texture and flavor.
