Ingredients

2 cups All-Purpose Flour

1/2 teaspoon Baking Powder

1/2 teaspoon Salt

1/2 cup Unsalted Butter, Softened

1 cup Granulated Sugar

2 Large Eggs

1/2 teaspoon Vanilla Extract

1 cup Ricotta Cheese

1/2 cup Mini Chocolate Chips

1/4 cup Chopped Pistachios

Powdered Sugar for Dusting


Instructions

  1. Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Beat in eggs, one at a time, then vanilla extract. Mix in ricotta cheese.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in mini chocolate chips and chopped pistachios.
  6. Drop spoonfuls of dough onto the prepared baking sheets. Bake for 12-15 minutes until lightly golden.
  7. Let cool on baking sheets for a few minutes, then transfer to wire racks. Dust with powdered sugar before serving.

Notes

For a gluten-free version, use a gluten-free flour blend.

Mascarpone or cream cheese can substitute ricotta for a different flavor.
