Description

Caprese Roasted Asparagus is a flavorful, healthy side dish featuring tender roasted asparagus, juicy cherry tomatoes, melted mozzarella, and a tangy balsamic glaze. This easy 20-minute recipe is perfect for weeknight dinners or special occasions. With fresh basil on top, it’s a refreshing twist on the classic Caprese salad.


Ingredients

1 lb asparagus, trimmed

2 tbsp olive oil, for drizzling

Kosher salt and pepper, to taste

2 cups shredded mozzarella cheese

2 cups cherry tomatoes, halved

Fresh chopped basil, for garnish

Bottled balsamic glaze, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with foil and lightly spray it with non-stick cooking spray.
  2. Arrange the asparagus in a row on one side of the baking sheet, and the cherry tomatoes on the other side.
  3. Drizzle 1 tablespoon of olive oil over the asparagus and season with salt and pepper. Repeat with the tomatoes.
  4. Roast the vegetables for 10 minutes.
  5. Remove the baking sheet with 5 minutes remaining, sprinkle shredded mozzarella over the asparagus, and return it to the oven until the cheese melts and turns golden, about 5 minutes.
  6. Transfer the asparagus to a serving plate, top with roasted tomatoes, garnish with fresh basil, and drizzle with balsamic glaze.

Notes

For best results, trim the tough ends off the asparagus before roasting.

Substitute fresh mozzarella balls if you prefer a more authentic Caprese flavor.

Feel free to use homemade balsamic glaze by reducing balsamic vinegar with a bit of honey.
