3 medium apples (peeled, cored, and chopped)

For the Caramel Glaze:

1 stick unsalted butter

2 teaspoons heavy cream

1/2 cup packed brown sugar

1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch bundt pan and set aside.
  2. In a large bowl, beat together the sugar, vegetable oil, eggs, and vanilla extract until light and fluffy, about 3 minutes.
  3. Mix in the flour, baking soda, cinnamon, and salt until just combined. The batter will be thick.
  4. Fold in the chopped apples until evenly distributed.
  5. Pour the batter into the prepared bundt pan, spreading it evenly.
  6. Bake for 60-65 minutes, or until a cake tester comes out clean.
  7. Cool in the pan for 20 minutes, then transfer to a plate.
  8. For the caramel glaze, melt butter in a saucepan over medium-high heat. Stir in heavy cream and brown sugar, whisking constantly until boiling. Add vanilla extract and continue whisking until smooth.
  9. Let the glaze sit for 10 minutes to thicken, then drizzle over the cooled cake.

Notes

Use firm apples like Granny Smith or Honeycrisp for the best texture and flavor.

If the caramel glaze is too thin, cook it a little longer or add extra brown sugar to thicken.

The cake can be made in advance and stored at room temperature for up to 3 days or refrigerated for up to a week. It also freezes well for up to 3 months.
