Carne Guisada is a rich and savory Latin beef stew, perfect for a comforting meal. With tender beef, aromatic spices, and vibrant vegetables, this hearty dish pairs wonderfully with rice, tortillas, or crusty bread.
Ingredients
2 lbs beef chuck or stew meat, cut into 1-inch cubes
2 tbsp olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 green bell pepper, chopped
1 medium tomato, diced
2 tbsp tomato paste
2 cups beef broth
1 tsp ground cumin
1 tsp chili powder
1/2 tsp paprika
1/2 tsp ground oregano
1 bay leaf
1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
Salt and pepper, to taste
Fresh cilantro, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Season beef with salt and pepper, then sear until browned on all sides. Remove and set aside.
- Sauté onion, garlic, and bell pepper in the same pot for 3–4 minutes, until softened.
- Stir in tomato paste and cook for 1–2 minutes to caramelize.
- Add diced tomato, cumin, chili powder, paprika, and oregano, mixing well.
- Return beef to the pot, pour in beef broth, and add bay leaf. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally.
- (Optional) Add cornstarch slurry during the last 10 minutes to thicken. Adjust seasoning as needed.
- Garnish with cilantro and serve with rice, tortillas, or bread.
Notes
Add diced potatoes, carrots, or peas for extra heartiness.
Adjust spice levels by adding jalapeños or crushed red pepper flakes.
For a lighter stew, substitute beef broth with chicken or vegetable broth.
