Description

Ingredients

1 lb ground beef

1 onion, chopped

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

½ cup shredded cheddar cheese

½ cup shredded Monterey Jack cheese

1 cup crushed tortilla chips

1 tablespoon olive oil

Salt and pepper to taste


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until softened.
  3. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.
  4. Stir in taco seasoning, black beans, kidney beans, corn, and diced tomatoes. Season with salt and pepper. Simmer for 5-7 minutes.
  5. In a greased 9×13-inch baking dish, spread the beef and bean mixture.
  6. Sprinkle cheddar and Monterey Jack cheese evenly over the top.
  7. Add crushed tortilla chips as the final layer.
  8. Bake for 20-25 minutes until cheese is melted and bubbly.
  9. Let cool slightly before serving.

Notes

Make it spicier by adding jalapeños or cayenne pepper.

Use different cheeses like pepper jack or a Mexican blend.

Make it vegetarian by swapping ground beef with extra beans or a meat substitute.

For a low-carb version, reduce or omit tortilla chips and add extra cheese.
