Ingredients
1 medium head of cauliflower, cut into florets
1 large head of garlic, roasted
1 tbsp olive oil
1 medium onion, chopped
3 cups vegetable or chicken broth
1 cup milk (or heavy cream)
1 ½ cups sharp cheddar cheese, shredded
¼ tsp ground nutmeg (optional)
Salt and pepper, to taste
1 tbsp butter (optional)
Fresh parsley or chives for garnish (optional)
Instructions
Roast the Garlic
- Preheat oven to 400°F (200°C).
- Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes. Cool slightly and squeeze out roasted garlic.
Sauté the Onion
3. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5-7 minutes until softened.
Cook the Cauliflower
4. Add cauliflower florets to the pot. Cook for 5 minutes, stirring occasionally.
Add Broth and Garlic
5. Pour in the broth and add roasted garlic. Simmer for 15-20 minutes until cauliflower is tender.
Blend the Soup
6. Use an immersion blender to puree the soup until smooth. Alternatively, blend in batches in a regular blender.
Finish the Soup
7. Stir in milk (or cream) and cheddar cheese until melted. Season with salt, pepper, butter, and optional nutmeg.
Serve
8. Garnish with parsley or chives and serve with crusty bread or crackers.
