8 cups water

1/4 cup baking soda

1 egg, beaten (for egg wash)

Coarse salt, for topping


Instructions

  1. Combine warm water, sugar, and yeast; let sit until foamy.
  2. Add melted butter, flour, and salt; knead dough until smooth. Let rise for 1 hour.
  3. Preheat oven to 450°F (230°C) and prepare a baking sheet with parchment paper.
  4. Divide dough, fill with cheese, and shape into pretzels.
  5. Boil each pretzel in baking soda water for 20-30 seconds.
  6. Brush with egg wash, sprinkle with salt, and bake for 12-15 minutes.
