Ingredients
1/2 cup peanut butter
1/4 cup cocoa powder
1/4 cup milk of choice
1/2 cup pure maple syrup or honey
2 tsp pure vanilla extract
1/2 cup oat flour
1/4 tsp salt
1/4 tsp baking soda
1/2 cup chocolate chips (optional)
8 oz cream cheese, softened
3 tbsp plain yogurt or sour cream
3 tbsp sugar or sweetener of choice
1/2 tsp vanilla extract
1 tbsp cornstarch
Instructions
- Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, whisk together the peanut butter, cocoa powder, milk, maple syrup, and vanilla until smooth.
- Stir in the oat flour, salt, baking soda, and chocolate chips (if using) to form a thick brownie batter.
- In a separate bowl, beat the cream cheese, yogurt, sugar, vanilla, and cornstarch until smooth and creamy.
- Spread about two-thirds of the brownie batter evenly into the prepared pan.
- Dollop spoonfuls of the cheesecake mixture on top, then add the remaining brownie batter.
- Use a knife to gently swirl the two layers together to create a marbled effect.
- Bake for 28 to 32 minutes, until the center is just set and a toothpick inserted comes out mostly clean.
- Let cool completely, then refrigerate for at least 2 hours before slicing.
