Description

Cheesy Baked Vegetable Rolls are a delightful vegetarian snack or appetizer, featuring creamy mozzarella and fresh sautéed veggies wrapped in a golden, flaky puff pastry. Ingredients

1 package of puff pastry (about 2 sheets)

1 cup spinach, chopped

1/2 cup mushrooms, finely chopped

1/2 cup bell peppers, finely chopped

1/4 cup red onion, finely chopped

1 cup mozzarella cheese, shredded

1/4 cup cream cheese, softened

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon pepper

1 tablespoon olive oil (for brushing)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into 4 squares.
  3. Sauté the spinach, mushrooms, bell peppers, and red onion in a medium skillet over medium heat until tender (about 5-7 minutes). Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the sautéed vegetables, mozzarella, cream cheese, garlic powder, salt, and pepper. Mix until well combined.
  5. Place a spoonful of the vegetable and cheese mixture in the center of each puff pastry square.
  6. Fold the corners of the puff pastry over the filling to create a roll, pinching the edges to seal them.
  7. Place the rolls on a baking sheet lined with parchment paper and brush the tops with olive oil.
  8. Bake for 20-25 minutes or until golden brown and the cheese is melted.
  9. Serve warm and enjoy!

Notes

Add more veggies like zucchini or kale for different flavors.

For a spicy kick, add red pepper flakes to the filling.

For a non-dairy version, use dairy-free mozzarella and cream cheese.
