Ingredients
1 package of puff pastry (about 2 sheets)
1 cup spinach, chopped
1/2 cup mushrooms, finely chopped
1/2 cup bell peppers, finely chopped
1/4 cup red onion, finely chopped
1 cup mozzarella cheese, shredded
1/4 cup cream cheese, softened
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil (for brushing)
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into 4 squares.
- Sauté the spinach, mushrooms, bell peppers, and red onion in a medium skillet over medium heat until tender (about 5-7 minutes). Remove from heat and let cool slightly.
- In a mixing bowl, combine the sautéed vegetables, mozzarella, cream cheese, garlic powder, salt, and pepper. Mix until well combined.
- Place a spoonful of the vegetable and cheese mixture in the center of each puff pastry square.
- Fold the corners of the puff pastry over the filling to create a roll, pinching the edges to seal them.
- Place the rolls on a baking sheet lined with parchment paper and brush the tops with olive oil.
- Bake for 20-25 minutes or until golden brown and the cheese is melted.
