Ingredients
1 small green cabbage, chopped
1 medium Vidalia onion, chopped
8 tbsp butter
Salt and pepper, to taste
1 can (10 oz) cream of chicken or mushroom soup
⅓ cup mayonnaise
3 tbsp melted butter (for topping)
1 cup shredded sharp cheddar cheese
Instructions
-
Preheat the oven to 350°F (175°C) and lightly grease a 2-quart baking dish.
-
In a large pan, melt 8 tablespoons of butter over medium heat. Add the chopped cabbage and onion.
-
Sauté the mixture for 8–10 minutes, stirring often, until the cabbage is softened. Season with salt and pepper to taste.
-
Transfer the cooked cabbage and onion mixture to the prepared baking dish.
-
In a bowl, combine the cream of chicken (or mushroom) soup with mayonnaise. Spread this mixture evenly over the cabbage in the dish.
-
In a small bowl, mix 3 tablespoons of melted butter with the shredded cheddar cheese. Sprinkle this mixture evenly over the top of the casserole.
-
Bake for 30 minutes, or until the top is bubbly and golden brown.
-
Let the casserole cool slightly before serving.
Notes
Tip: To prevent the cabbage from becoming too soggy, sauté it until it’s just softened, not overly cooked.
Storage: Leftovers can be stored in an airtight container in the fridge for 3–4 days.
Reheating: Reheat the casserole at 350°F (175°C) for 10-15 minutes or microwave individual servings for 1–2 minutes.
