Description

Ingredients

2 cups cooked chicken, shredded or chopped

3 cups broccoli florets, lightly steamed

1 cup cooked brown rice or quinoa (optional)

1 1/2 cups shredded cheddar cheese

1/2 cup plain Greek yogurt or sour cream

1/4 cup cream cheese, softened

1/2 cup milk (dairy or non-dairy)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon paprika

Salt and black pepper to taste

1/3 cup grated Parmesan cheese (optional topping)

1/2 cup breadcrumbs or crushed crackers (optional topping)

Olive oil spray or butter for greasing the dish


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil spray or butter.
  2. In a large mixing bowl, whisk together the Greek yogurt, cream cheese, milk, garlic powder, onion powder, paprika, salt, and black pepper until smooth.
  3. Stir in the cooked chicken, steamed broccoli, and cooked rice or quinoa (if using), along with 1 cup of shredded cheddar cheese. Mix well.
  4. Transfer the mixture to the prepared baking dish and spread it evenly.
  5. Top with the remaining 1/2 cup of cheddar cheese, Parmesan cheese (if using), and breadcrumbs or crushed crackers.
  6. Bake uncovered for 25–30 minutes, until the top is bubbly and golden brown.
  7. Let cool for 5–10 minutes before serving to allow the casserole to set.

Use gluten-free breadcrumbs or skip the topping for a gluten-free version.

Dairy-free substitutes like plant-based cheese and yogurt work well.
