4 large russet potatoes, peeled and thinly sliced

1 cup grated Parmesan cheese

1 teaspoon salt

1/2 teaspoon ground black pepper

1/2 teaspoon paprika (optional)

1/2 teaspoon dried thyme (optional)

Fresh parsley, chopped (for garnish, optional)


Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large saucepan, melt butter over medium heat. Add chopped onion and garlic, sautéing for 2-3 minutes until softened.
  3. Pour in heavy cream, milk, salt, pepper, paprika, and thyme. Stir to combine and bring to a simmer. Stir occasionally until hot and well-mixed.
  4. Gradually add shredded cheddar and grated Parmesan cheese, stirring constantly until the cheese melts and the sauce becomes smooth.
