Description

These Cherry Cheesecake Brownies combine a rich, fudgy brownie base, a creamy cheesecake layer, and a swirl of sweet cherries, creating the ultimate dessert experience. Perfect for satisfying cravings, they’re easy to make, flavorful, and ideal for any occasion. A sweet treat that beautifully balances chocolate, cheesecake, and cherries in every bite!

Ingredients

For the brownie base:

1/2 cup unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 teaspoon salt

1/4 teaspoon baking powder

For the cheesecake layer:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 egg

1 teaspoon vanilla extract

For the cherry topping:

1 cup cherry pie filling (or fresh cherries, pitted and chopped)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together melted butter and sugar. Add the eggs, one at a time, and vanilla extract, whisking until smooth.
  3. In a separate bowl, combine flour, cocoa powder, salt, and baking powder. Gradually fold the dry ingredients into the wet ingredients until just combined.
  4. Pour the brownie batter into the prepared pan, spreading it evenly.
  5. In another bowl, beat the cream cheese with sugar until smooth and creamy. Add the egg and vanilla extract, and beat until well combined.
  6. Pour the cheesecake mixture over the brownie batter, spreading evenly. Use a knife to swirl the layers together, creating a marbled effect.
  7. Spoon the cherry pie filling or fresh cherries over the cheesecake layer, spreading evenly.
  8. Bake for 35-40 minutes or until a toothpick inserted comes out with a few moist crumbs.
  9. Let the brownies cool completely before cutting into squares and serving.

Notes

If using fresh cherries, consider sweetening them slightly with sugar before topping the cheesecake layer.

For a larger batch, use a 9×13-inch pan and adjust the baking time.

Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
